Roasted Peaches, Maple Oats, and a Lesson in Coming Home to Yourself
A sweet, simple reminder that you don’t have to get it perfect to make it meaningful.

Recipe:
Ingredients -
2 Peaches, halved
3 Tbsp, Granulated Sugar
2 Tbsp, Maple Syrup or Honey (I used maple syrup)
1-2 Tbsp, Cinnamon
2 Tbsp, Butter
1 tsp, Vanilla Extract
1 tsp, Olive Oil
For the Toasted Oats:
1/2 cup Dry Rolled Oats
1 Tbsp, Cinnamon
1/2 tsp, Nutmeg
1 Tbsp, Butter
1 Tbsp, Maple Syrup
Instructions:
The idea here is to fill halved peaches with a delicious cinnamon/syrup mixture and serve with ice cream, topped with toasted oats, more cinnamon for garnish, and drizzled with maple syrup. Adjust according to your taste preferences - this is so easy and delicious to make!
Turn your oven on 350 degrees and line your baking dish with parchment paper. Set aside.
Wash and halve your peaches using a sharp knife. Twist the peaches open and use your knife or fingers to remove the pits. Repeat. (This step can be messy if your peaches are soft. Refrigerate them 1-2 hours to firm them up, if preferred but this is not a deal breaker.)
Brush olive oil on both sides of the peach and bake face down in the dish for 4 minutes.
While baking, combine: 3 Tbsp granulated sugar, 2 Tbsp maple syrup or honey, 1-2 Tbsp cinnamon, 2 Tbsp butter (any form works), and 1 tsp vanilla extract in a small dish. I combined with a knife until the mixture was smooth.
Remove the peaches from the oven and turn them pitted side up. Spoon the mixture into the hollowed sections and place back in the oven for another 5 minutes. (It’s okay if it overflows or runs, this excess will be delicious later)
For extra char, broil for 1-2 minutes.
Remove from the oven and serve warm!
Serve It With:
Dollops of vanilla bean ice cream 🍨
Top with toasted oats
Garnish with more cinnamon or nutmeg
Drizzle maple syrup for extra deliciousness.

A Lesson in Coming Home to Yourself
Sometimes feedback hits in a way you don’t expect.
Not because it’s harsh — but because it brushes up against the version of you that’s been moving so fast, pushing so hard, trying so much — you didn’t even realize how far you’d drifted from yourself.
I didn’t agree with it at first. I felt misunderstood. But I gave it time. Sat with it. And when I finally looked closer, I saw something worth noticing: maybe I had lost touch with my softness.
So I did what I always do when I need to find my way back — I created.
I’d seen this roasted peach dessert floating around Pinterest, but never a real recipe. Just vibes. So I ventured into the kitchen, hoping to make something simple, sweet, and mine.
It didn’t go smoothly. The peaches were stubborn. The slices weren’t pretty. Filming fell apart. It was one of those “this should’ve been easy” kind of moments.
So, instead of getting frustrated with these imperfections, I stepped back. Put the tripod away. Took a breath. And leaned into what I do know: how to create from feeling, not just form.
I toasted oats with butter, maple syrup, and cinnamon. Let the peaches roast slowly until their edges softened. Scooped vanilla ice cream without overthinking it. Sprinkled cinnamon on top.
The result?
Not Pinterest-perfect.
Better.
A small act of returning — to myself, to intention, to softness.
A gentle reminder that you don’t have to get it perfect every time to make something beautiful - and delicious, in this case.
