If you’ve been following my journey, you know I lean on sensory details to really feel a moment—and a season.

Spring is no different.

I wanted a drink that captured that lightness—the kind of day when the doors are open, you’re barefoot between inside and out, there’s a soft breeze, and a little bossa nova playing in the background.

So I translated that into a sip: something bright, energizing, and gently blooming as you drink it.

Green tea + a splash of pineapple juice + simple syrup.

Iced Green Tea Refresher
What’s In It

 

Serves: 6–8
Prep Time: 5 minutes
Chill Time: 2 hours (or overnight)


Ingredients:

  • 4 green tea bags

  • 4 cups boiling water

  • ¾ cup pineapple juice, chilled

  • ¼ cup simple syrup (recipe below) — or honey to taste

  • Juice of 1 fresh lemon

  • 2 cups cold water

  • ¼ cup freeze-dried pineapples

  • Ice

For the simple syrup:

  • 1 cup sugar

  • 1 cup water

To garnish:

  • Lemon slices

  • A few freeze-dried pineapples

  • Edible flowers, optional

  • Fresh mint sprigs, optional


 

How To Make It
Instructions

 

Make your simple syrup first. Combine sugar and water in a small saucepan over medium heat. Stir until the sugar fully dissolves — about 3–5 minutes. Remove from heat and let cool completely before using. Store any extra in a jar in the fridge for up to two weeks.

Steep the green tea. Bring 4 cups of water to a boil. Add your tea bags and steep for 8–10 minutes for a deeper flavor. Remove the bags and let the tea cool to room temperature.

Mix and chill. Combine the cooled green tea, pineapple juice, simple syrup, fresh lemon juice, and cold water in a large pitcher. Stir well and refrigerate for at least 2 hours — overnight is even better. The flavors settle beautifully and the color deepens.

Pour and garnish. Fill your glasses with ice. Drop a small handful of freeze-dried pineapples directly into the glass — they'll float beautifully and add the most gorgeous color. Pour the chilled refresher over the top. Add a lemon slice to the rim, a sprig of fresh mint, and/or a few edible flowers right on top. Serve immediately.


 

A Few Notes

  • Make it ahead. This is the perfect make-ahead drink — it actually tastes better the next day. I make mine the night before so the morning of is completely effortless.

  • The lemon matters. Don't skip it. Fresh lemon juice brightens the whole drink and helps the tea and juice blend beautifully. It's the detail that makes people ask what’s in this.

  • Adjust the sweetness. Start with ¼ cup of simple syrup and taste as you go. If you prefer a more natural sweetener, honey works beautifully — just add it while the tea is still warm so it dissolves easily.

  • Make it sparkling. Swap the cold water for chilled sparkling water or club soda right before serving for a little fizz. Add it last so you don't lose the bubbles.

  • The glass matters. I served mine in a stemless wine glass — it makes even a Tuesday feel like an occasion. 🤍
