Soft Starts & Sunday Rituals: Divine Crepes in Under 10 Minutes

Whip up these crepes in minutes — and stay for a little food for thought.

Crepe Recipe:

Ingredients -

  • 1 cup Flour

  • 2 Tbsp Sugar

  • 1/2 tsp Salt

  • 1 and 1/4 cup milk

  • 4 Tbps butter, melted

  • 1 tsp Vanilla Extract

  • 2 Large Eggs

Filling:

  • Preserves and fresh fruit of your choice to stuff the crepes once cooked!

Instructions:

  1. Combine wet ingredients into dry ingredients. Pour mixture into a blender (I used a regular ninja blender).

  2. Blend until a smooth, watery-texture is reached.

  3. On medium heat, coat a shallow pan in butter and spoon in crepe mixture with ladle, making a thin, wide circle.

  4. Cook for ~1 minute on each side, or until preferred doneness. Then flip.

  5. Remove from heat and fold crepes in half.

  6. Stuff with your favorite toppings like Nutella, fresh fruit, or a berry reduction. (Use plain cream cheese to keep the fruit/berries from falling out.)

  7. Fold again and sift powdered sugar on top.

I love when I’m casually reminded of the simple things hidden in everyday life. It’s like finding something you didn’t know you’d lost — a softness, a slowness, a sense that life is best savored in small bites.

Ever since having the baby, I’ve been intentional about creating little moments of delight in our lives. Anyone working full time, managing relationships, momming, friend-ing, etc, knows how difficult balancing the load of “it all” can feel. Actually most days, it doesn’t feel like we can truly have it all without letting other things drop.

So, in this pursuit, it’s been really healing surrounding myself with beautiful things and finding the joy in otherwise basic moments.

For me, joy shows up in the midday sun, a slice of lemon with fresh mint from the kitchen, the glow of romantic lighting, and the quiet decision to feel thankful for the toy-strewn floor—because it means our baby’s laughing somewhere nearby.

On this particular day, it was waking up the household to the smell of fresh, soft and crispy, raspberry filled crepes - which were amazing!

It’s these things that make me realize, even if I still have destinations to reach, (and toys to clean up) - I am certainly living my dream life.
